The pandemic has made us all crave comforting food. What is more comforting than banana bread. I just feel all my stress leaving my body with just a bite. I know I shouldn’t be stress eating. But this time calls for it and I love banana bread. It is my idea of self care. Let me share my banana bread recipe!

Banana bread is like a grandmother’s hug. The smell in your house of sugar, butter and banana is scrumptious.

It is the perfect baked good to make if you have bananas that have gotten ripe.

Banana Bread Recipe – Ingredients

1 ½ cup Flour
2 eggs
1.5 to 2 ripe bananas should equal 1 cup of mashed banana
1 teaspoon vanilla essence
1 teaspoon baking soda
1 cup jaggery or brown sugar
½ cup greek yogurt
Sprinkle salt

Directions

Put your oven to preheat 176 degrees Celsius before you start mixing so by the time you are done mixing you have the oven ready.

Mix the brown sugar/Jaggery and butter at room temperature (you can also melt the butter for 10 seconds in the microwave). Mix it properly so that it is easier to mix the other items.

Then add a beaten egg. After that put in the flour, sprinkle salt and baking soda.

Then add the greek yogurt, mashed bananas and vanilla essence.

If you like chocolate chips and walnuts add them. I like to eat banana bread just on its own. If you don’t want to use brown sugar you can use normal sugar. If you want to go healthier you can also use honey but just use 1/2 to 3/4 cup as honey can be sweet.

Then butter your loaf pan and put it in the oven. It can take 45 minutes to 1 hour 10 minutes. So check after 45 minutes.
